Sometime in the Fall of 2002, we signed a lease on a bar in downtown Miami with the idea of opening up a cocktail lodge we'd call Over Under.
The concept behind the bar was to evoke an Old Florida feeling with odes to Florida Cracker, Palm Beach, the Everglades, and Florida Gaming.
Branding was done in partnership with Brian Butler. Interiors were designed by Brian Griffiths.
The Beverage Program features cocktails focused on Sub-tropical ingredients and beer, wine, and spirits from the lower-east quadrant of the North Americas. Head Bartender, Baylee Pruitt, worked to implement the program conceptualized by principal, Brian Griffiths.
The Bar's Food was concepted by Brian Griffiths. Big Zaddi, Juicy James took care of the heavy lifting. The goal was to create a menu that featured local wild and local foods; produce, seafood, and game.
